In most cases, cooking appliances have hot and cold spots rather than a consistent temperature throughout the entire chamber.
Most built-in cooker thermometers are located in a different spot from where you place your food, such as at the back of the oven or on the lid of the grill. So, the temperature they read is usually not the same as the temperature right near your meat.
That's why MEATER's ambient sensor needs to measure the heat right at the thicker end of the probe. It tells you the actual temperature your food is exposed to and helps to calculate a more accurate cooking time.
