If you're using more than one thermometer to check your meat temperature, there's a couple of important things to keep in mind:
Temperature can vary inside the meat
While you're still cooking, the temperature might vary in different parts of the meat. This can happen because of differences in meat thickness, fat content, or how close the probe is to a bone.
Sensor placement matters
Even if you're measuring in the same spot, the placement of the sensor inside the probe can also make a difference in the reading. Most other thermometers have their sensors right in the tip, whereas we build our probes with the sensors a little further up:
- The Alpha Collection sensor is about 2 cm from the pointed end.
- The 5 Pro Collection sensors are all in different spots near the pointed end, and the reading that shows in the MEATER app will always be the lowest temperature.
MEATER Pro vs. Alpha Collection
Alpha Collection probes have 1 internal sensor and 1 ambient sensor.
Pro Collection probes have 5 internal sensors and 1 ambient sensor to give a clearer picture of temperature variations across the meat.
On the MEATER app Dashboard, you'll see only the lowest of the 5 temperatures for the MEATER Pro Collection, as this is where the meat is thickest. If you want to see what all the sensors are reading, just tap the internal temperature dot to bring up the probe map.
Calibration
All MEATER probes are lab-calibrated and thoroughly tested:

Pro Collection: ±0.2°F / 0.1°C and includes a calibration certificate
So while your MEATER might not match another thermometer exactly, you can trust it's giving you a highly accurate reading where it matters most.
